The 2021 Malbec goes full-bore from the glass, enveloping the nose with violets, black currant, forest truffle and pencil shavings. The palate is stacked, layered and impeccably integrated, flooding the mouth with flavors of black plum, blackberry, boysenberry, earthy loam, and herbs. Firm yet refined tannins expand into a broad, structured finish. A rousing rendition of Malbec representing the very best of the Tooth & Nail estate.
The Tooth & Nail estate in the west-side Willow Creek District features an ideal terroir for growing world-class Bordeaux varieties. Warm summer days are moderated by brisk coastal breezes that rush through the Templeton Gap each evening, bringing tempo and length to the growing season.
The limestone-rich Calodo soils allow for the retention of acidity and energy in the fruit, while the presence of shaly clay provides a type of natural moisture regulation. Calcareous-clay soils are the mark of premier terroirs worldwide, providing context for the potential of the Tooth & Nail estate.
The fruit was selected from the west-facing hillside of Block 3, where we applied meticulous viticultural practices to maximize fruit quality. The grapes were hand-sorted, gently destemmed, and transferred to concrete tanks for cold-soaking and fermentation. Concrete was chosen for its ability to moderate fermentation temperature and duration while cultivating fine textures.
After fermentation, the free-run juice was reserved for maturation in 67 percent new French oak barriques coopered by Seguin Moreau (medium plus toast) with a complement of Atelier steam-bent barriques (light toast), which added volume and detail to the midpalate of the finished wine. After 18 months of undisturbed aging, the finest barrels were chosen and blended to create this small-batch Malbec. A contribution of estate-grown Cabernet Sauvignon (21%) was incorporated into the final blend for enhanced length and elegance. The wine was bottled unfined and unfiltered.
