The 2021 Cabernet Sauvignon engulfs the nose with violets and plum with suggestions of herbs, peppercorn, black olive, and toasted oak. A massive mouth-coating texture expands with layered flavors of wild cherry, blackberry, mulberry, mint, cocoa, and vanilla with underlying hints of coffee and forest earth. Elegant acidity and powerful tannins bring impressive staying power to the finish. A tour de force Cabernet Sauvignon that will reward careful cellaring for more than a decade to come.
The Tooth & Nail estate in the westside Willow Creek District features an ideal terroir for growing world-class Cabernet Sauvignon. Warm summer days are moderated by brisk coastal breezes that rush through the Templeton Gap each evening, bringing tempo and length to the growing season.
The limestone-rich soils allow for the retention of acidity and energy in the fruit, while the presence of shaly clay provides the type of natural moisture regulation that the best Cabernet fruit demands. Calcareous-clay soils are the mark of premier terroirs worldwide, providing context for the potential of the Tooth & Nail estate.
The fruit was selected from the crown of Block 1, where we applied meticulous viticultural practices to maximize fruit quality. The resulting hand-picked fruit exhibited the hallmarks of superior Cabernet: loose clusters and intensely colored berries with high phenolic character.
The grapes were hand-sorted, gently destemmed, and transferred to a concrete tank for fermentation over a period of 16 days. Concrete was chosen for its ability to moderate fermentation temperature and duration while cultivating fine texture.
After fermentation, the free-run juice was racked to 225-liter French oak barriques (64% new oak) coopered by Seguin Moreau, Mercurey, Sylvain, and Atelier. These medium+ toasted barriques were selected by Director of Winemaking Jeremy Leffert for their ability to sweeten the mouthfeel while imparting hints of toffee and espresso. The wine was matured undisturbed in these barriques for 18 months. The final blend incorporated a small contribution of estate Malbec (4%) to enhance the wine’s black fruit dimension. The wine was bottled unfined and unfiltered.
